have an option in preferences to select complete as the default

Doing this would not work with how a CRM is best utilized. You should want to be putting future activities in Matrix so that you can strategically plan with your accounts. If you’re always putting in activities after the fact, you’re probably just doing it to satisfy your manager and we can’t imagine that is their intent with activities either.
